Family Feast Chicken


Gather this:

  • A Large Dutch Oven

  • 2tsp salt

  • 1tsp pepper

  • 1tsp dried parsley

  • 1tsp garlic salt

  • 1tsp dried onion

  • 2 Kovi Kai turmeric triangles

  • 1 whole chicken, split by your butcher into 8 parts, or any combination of skin-on bone-in thighs, drumsticks and breasts

  • 1 leek

  • 5 cups water

Then Do this:

Preheat oven to 375.

Mix the first 5 ingredients in a small bowl. Use this mixture to liberally season the chicken. Reserve any unused seasoning.

Clean and slice the leek and add it to the dutch oven. Cover with 5 cups water.

Add seasoned chicken and reserved seasoning. Bake for 40 minutes, covered.

Remove cover, add turmeric triangles, stir to expose the skin of the chicken.

Turn oven to broil. Broil for 10 minutes. Remove from the oven.

Let rest 10 minutes and serve.

Tip: Don’t throw away the cooking liquid! It makes a great soup the next day. For less liquid and crispier skin, reduce to 3 cups water
